The wood fired oven will be crackling. Champagne will be on pour. This Christmas, we will be staying open, with a menu touching on Christmas favourites.
A wood roasted lamb shoulder main, served with the Christmas classics - sprouts, cranberry, bacon and thousand-layer duck fat potatoes. A 'prawn cocktail' of juicy Skull Island prawns with fermented chilli and a cocktail sauce. And an Ora King Salmon en croute with burnt honey and mango.
It wouldn't be Christmas without the summer classics of cherries and pavlova, so to end is our crowning glory - a summer pavlova with Geraldton wax cream, sour cherries and passionfruit sorbet.
